Premium quality, extra smooth, extra virgin olive oils
Ross and Sarah Thomson are olive growers and live on their farm at Glenaroua in Central Victoria. Until 1999 their farm had a long tradition of quality wool, sheep and cattle production.
They realised that the slopes of Chapman Hill were ideal for growing olives and for the production of premium quality extra virgin olive oil. Since then, Chapman Hill Extra Virgin Olive Oil has been their passion.
Sarah Thomson has a food industry background. This combined with the Thomson famiy's love of food and trees, led them to begin planning the Olive Grove. The olive grove was established by Ross and Sarah and their children Kirsty, Hugh and Jock, the first carefully selected varieties were planted in 1999.
The Thomsons believe the olive tree is very compatible with the Australian landscape, which they continually enhance with their Landcare revegetation works. Wildlife corridors are a feature of the Keeyuga farm, and these corridors also border the olive grove creating a healthy eco system in which the olive trees thrive.

The Chapman Hill olive grove was established in 1999 with a planting of olive trees of Italian and Australian origin. This eight hectare grove is situated on the ironstone slopes of Chapman Hill. Elevated 300 metres, the grove aspect takes full advantage of the cold winters and long, warm, dry summers required to produce high quality, fruity oils.
The Chapman Hill olive grove is an ideal location for growing the high quality and full flavoured traditional Italian varieties Frantoio and Leccino, as well as New Norcia which evolved in Australia.
Leaving nothing to chance, the olive grove is irrigated using a sprinkler system to ensure correct moisture level at critical times such as flowering and fruit set.

Ensuring a safe quality food source
Chapman Hill is an Olive Care accredited olive grove.
The Olive Care programme was developed by the Queensland Dept of Primary Industry (DPI) in conjunction with a panel of processors and producers. The Olive Care Quality Assurance System has four components:
Olive Care for growers - Approved Supplier Programme to processors
Programme for HACCP Accreditation for Processors
Chemical Testing of Olive Oil
Sensory (Organoleptic) Tasting of Olive Oil by an Accredited Panel
The focus of Olive Care is ensuring a safe quality food source for processing.
Olive Care for growers incorporates HACCP principles. The one-day course provides a framework for a grower to develop and maintain an approved supplier programme for their own grove. The course workbook includes practical ways to identify and control hazards using good horticultural practice, a checklist process for internal review within the grove and provides examples of documentation needed for product traceability, including chemical storage, grove application, harvest and transportation records.
Growers are certified after a successful audit undertaken by a HACCP trained processor, who will audit growers annually prior to harvest. The Processor is required to attend a 3 day HACCP course and be able to develop a HACCP Plan for the processing operation (this plan is externally audited and certified).
