The Chapman Hill olive grove was established in 1999 with a planting of olive trees of Italian and Australian origin. This eight hectare grove is situated on the ironstone slopes of Chapman Hill. Elevated 300 metres, the grove aspect takes full advantage of the cold winters and long, warm, dry summers required to produce high quality, fruity oils. The Chapman Hill olive grove is an ideal location for growing the high quality and full flavoured traditional Italian varieties Frantoio and Leccino. The grove also has a small planting of New Norcia, a variety that evolved at the New Norcia Mission in Western Australia and is fast gaining reputation as Australia's own Extra Virgin Olive Oil.  Leaving nothing to chance, the olive grove is irrigated using an underground, computer controlled, drip irrigation system. This allows optimum soil moisture levels levels to be maintained through the growing and ripening seasons, whilst minimising water consumption.
